  1. This looks so delicious I can't wait to try. But I was wondering if I could substitute raisins for for the cranberries and can I use applesauce instead of the coconut oil. I also want to mention that I love the zucchini bread I made it with the coconut oil and then I made it with the applesauce and both were delicious

  2. Looks yummy! Charlie Brown would be proud! It is usually best to use organic anything but if I had to choose between organic vegies and fruit or organic meat and eggs i take the organic meat and eggs!

  3. To substitute eggs in this recipe you can use 1/4 cup of mashed banana or applesauce per egg. I have read pumpkin puree can also substitute eggs in such recipes but I haven’t tried it yet.

This sounds gross but I don't like Chia seed and also happen to have an allergy to them so I have used baking soda + baking powder + apple cider vinegar in some of my baking recipes and it works! You would have to fool around with the amounts but I have used that combo with chocolate muffins, and other baked goods……

  5. I think to make this recipe vegan, I would just follow one of your oat muffin recipes, use one or two flax eggs, use probably more like HALF a cup of pumpkin, 1/4 cup of pecans and of cranberries. as far as gluten free, arent oats gluten free? anyhow, thats what i would do.

  6. Thank you so much Dani for thinking about us vegans as well 🌞 I would try to replace 3 eggs with banana mash/apple sauce and three eggs with flaxseed eggs. That should be both creamy in texture and hold the batter together at the same time.

  9. For vegans: maybe add some psyllium fiber to help with the elasticity and the binding that the eggs provide? I'm not sure if this could work, but I believe it could be a good alternative.

  10. I was so excited to try this recipe but once you said that the chia eggs wouldn’t work okay this recipe I was let down 😢

    I’m going to try the bass of another muffin recipe and just sub in with the extra ingredients and see if it works 🤞
