You could make roasted veggies from the oven with some baked potatoes. A simple risotto with veg. A salad. Even pasta could have less or little more than 500 calories if you don't overload it with cheese and milk. Also, it's not necessary to count calories. You should always focus on eating healthy, balanced meals instead of calories. If you only eat a tiny amount of shrimps with aspargus and maybe rice, you won't be full for long. A balanced meal may have a little more than 500 calories, but it will keep you full until the next meal, stopping you from snacking on unhealthy, unnecessary calories.
ANYTHING is only 500 calories if you only eat 500 calories worth of what you cook, even if that means 1/2 cup of your meal. I don't like this tutorial.
I love these receipes but it always makes nervous at the amount of oil they use in them, especially when it says "under 500 calories" but then you see the veggies or meet absolutely litered in cream and oil.
