I was quite skeptical on how it would turn out, especially since I don't really like sweet potatoes and have struggled to incorporate them into my diet reguarly, but I tried making the sweet potat-oats a few mins ago. I used unsweetened cashew milk, crunchy almond butter (i didn't have any nuts to use as a topping or creamy kind), and fresh organic blueberries on top. OMG MIND BLOWN! I ate the entire bowl, it was so good and creamy with the perfect amt of sweetness( I did the optional maple syrup). It creepily tastes like oatmeal would and the almond pieces added such a nice crunch, so if you are using creamy alomond I would definitely recommend adding nuts top. I can't believe how good this was. It's what i've been trying to get regular non instant oatmeal to taste like. Thank you so much and this recipe will become a regular weekly meal! <3 <3
I never thought to grate a sweet potato, how awesome!! Definitely want to incorporate that try the porridge recipe and the chia pudding one too! I love the first one with granola and whatever nuts and seeds and coconut I have!
